Couscous and feta salad

When the summer comes and we want to eat easily and healthy, we often have a lack of new ideas. Chef of “Kūno kultūra“ Ignas Štuka wants to share a recipe of light couscous with feta salad, which would be the ideal choice for light dinner or lunch at work.

Ingredients (for 2 servings):

  • 140 g of couscous;
  • 200 g of “Kietaviškių“ grape tomatoes;
  • 1 short cucumber;
  • 200 g of feta cheese;
  • A handful of black olives;
  • A handful of arugula;
  1. Pour hot water on couscous, cover it up with foil and leave it for 30 mins, so it will stay fluffy and not stick.
  2. Chop the vegetables and feta cheese, mix it with couscous.
